Winter is around the corner...which means it's time to break out all those yummy warm-you-from-the-inside-out recipes. Here is one of my absolute favorites. It is Easy and "Fool-proof" Roasted Chicken.
In a large roasting pan:
Add chopped red potatoes and carrots. Add sliced or chopped onions, shallots and garlic cloves. The amounts can vary depending on your taste and how many people you are serving. No more than 4 servings per pan.
To prepare the bird:
Prick one lemon 25 times. Put lemon in the cavity along with one smashed garlic clove, a few sprigs each of fresh sage, rosemary and thyme, and salt and pepper. Sew both ends of the cavity closed...you can also use toothpicks to close the ends. Cook breast side down at 400 degrees for 25 minutes. Then remove pan from oven and turn the bird breast side up and continue cooking until done. About an hour. Remove pan from oven and remove lemon etc. and discard. Drain any juice from bird and add white wine to taste. Yum.
